2019 Chablis 1er Cru Vaillons, Jean-Paul Droin

This is a blend of five terroirs across the steep Vaillons premier cru. Blending gives Benoît the chance to introduce freshness, with higher acid fruit running through the riper parcels. 30% was fermented and aged in oak, giving a good depth of structure behind the bright and peachy fruit. It is usually one of the most forward and approachable in his cellar, and 2019 is no different, with its lovely scent of spring flowers. No need to wait here; it has the energy and tension to make it open from youth.

2019 Chablis 1er Cru Vaillons, Jean-Paul Droin


An interesting and relatively broad-ranging nose includes notes of white pepper, iodine, quinine and pretty floral scents. The plump, round and fleshy flavors possess a beguiling texture but not the same intensity and particularly so on the borderline fat finish. To be clear, this is by no means heavy or lacking vibrancy, but it seems clear that it should be drunk on the earlier side compared to many of these 1ers.

Domaine Jean-Paul & Benoît Droin

Present in Chablis since at least 1620, nobody understands Chablis better than the Droin family. Jean-Paul (J.P.) first put the estate on the map, and it’s now Benoît in charge. He’s the fourteenth generation at the helm, since 1999. That was the same year the Droins built a state-of-the-art winery, in the shadow of the Grands Crus. Benoît has increased quality considerably. He uses less new oak, making Chablis that’s crisp, precise, and that shows differences between each vineyard clearly.
