Jerez Cortado is one of the rarest of sherry's many variants, and a style championed by Javier Hidalgo. Has a bright, pale, striking, burnt-amber appearance, its nose offering a complex array of toasted, nutty nuances, and with a lifted fino-like yeastiness. The palate shows great refinement: this is a poised style with layers of gently tangy peel characters, creating a sense of richness, yet maintaining a dry presence. Hidalgo's Jerez Cortado is well-balanced and fresh with a persistent finish. As appetising a glassful as you could wish for. Serve cool, not chilled.
