(35% whole clusters go into the bottom of a concrete tank; the wine was pressed just after the end of fermentation and aged for 16 months in a large used foudre; from a crop level of 5 tons per hectare): Good dark, fresh red. Highly nuanced if slightly sauvage, reduced aromas of crushed raspberry, lavender, black pepper, spices and flint complicated by leather and a whiff of the barnyard and lifted by a floral high note. Very saline and savory, conveying an impression of sweetness (the wine is actually quite dry, at 1.8 g/l r.s.) to its tangy raspberry and leather flavors. Finishes with substantial dusty tannins and excellent length. This wine was racked only for the bottling, noted winemaker Rudiger Gretschel.
