This is a blend of 50% Pecorino, 30% Passerina, 10% Trebbiano, 10% Malvasia di Candia, with time on the skins giving a beautiful golden colour to the wine. It’s remarkably complex on the nose, with notes of orange peel and lots of herbal lift. Notes of thyme, fennel, and also a hint of ginger all leap from the glass. The palate is vibrant and textured, and there’s so much length and precision. This is utterly delicious.
