With 14 years of ageing under lees, this is a hugely complex wine that shows notes of white truffle, honeycomb and sea spray on opening. Still so fresh and vibrant there is a satin-like feel to the mousse which coats the palate with notes of apricot pastry, salted almonds and oyster shell. There are accents of lemon zest and stone fruit through the palate with a finish that lingers effortlessly.
