2018 'Abyss' Brut Zéro, Leclerc Briant

Cuvée Abyss is one of the most extraordinary Champagnes you’ll find. The wine that goes into the bottle is delicious - a blend of equal parts Chardonnay, Pinot Noir, and Meunier from Leclerc Briant’s biodynamically farmed vineyard. So far, so normal. But it’s the ageing of these bottles - deep under sea - that set them apart as a complete one-off in the wine world. Before being plunged into the depths, the Champagne spends three years on the lees in the house’s cellars in Epernay. It’s subsequently disgorged, before the bottles are shipped to Brittany, where they’re submerged at a depth of 60m where the pressure inside and outside the bottle are matched. There they stay for a year, in a state of perpetual tidal flux. The resulting wine is complex and pure, with astonishing minerality and drive, as well as a tender, sleek fruit depth. The bottles are also covered in barnacles, lest you forget where they’ve been. It’s the meeting of art and science: can we taste the influence of the sea-ageing?
