This extra brut blanc de blancs is so light on its feet. It's a masterclass from this young talent, Aurélien Gerbais, who is fast becoming a name to watch. The heart of the wine is built upon a perpetual reseve, started in 2011. Champ Viole is a single vineyard which lays claim to being one of the very first planted by the Cistertian monks in the neighbouring Abbaye Notre-Dame de Mores.
