2000 Cuvée Dom Pérignon, Moët et Chandon

Delicate lemon gold in the glass, with a fine, consistent mousse. The nose already shows a great deal of complexity with poached pears, acacia honey, a definite floral note which really adds to its elegance and the subtlest hint of toasted brioche. The acidity is there, but it is well concealed with the depth of fruit concentration and creamy texture. This wine has a richness to it, but also a degree of austerity and the finish is bone dry.
