2023 Arbois Trousseau Singulier, Bénédicte et Stéphane Tissot, Jura

In warm vintages, the red wines of the Jura are an untold joy, offering up soft berry flavours with fresh, crunchy acidity and fine little tannins. This wine in particular is a labour of love. Three quaters of the Trousseau bunches undergo carbonic maceration for three weeks, followed by a week of maceration with gentle plunging. The remaining quater of the bunches are destemmed and spend three months macerating in ancient foudres. The two components are later blended. It is juicy and fresh, with a velvet-like structure. This shows why Jura reds are so exciting.
