Cabassaou is the pinnacle of the Tempier stable, with unparalleled ageing potential. The vines sit at the bottom of La Tourtine, and are protected from the fierce Mistral wines by stone walls. Low yields here contribute massive concentration, and oblige long cellaring. With time, this will be outstanding.
