2024 Chablis 1er Cru Vaillons, William Fèvre

Vaillons is a warm, sunny premier cru, much admired in the region. Fèvre has a substantial 3.5 hectares right in the middle of the slope. Their 55-year-old vines produce concentration and ripeness in the wine. It bursts with floral aromatics: white blossom and jasmine spice. Amplitude on the palate will only build over time.

Tasting notes

Overall a yield of 12hl/ha, though with differences: 30 hl/ha in Mélinots, but the other end of the valley was badly hailed. A little more flesh alongside the classical style. The usual chalky stony character through the mouth, with a dancing finish, pure elegance and some persistence. Drink from 2028-2031. Tasted Jul 2025.

The 2024 Chablis Vaillons 1er Cru has a more neutral bouquet compared to the Montmains. This is citrusy and fresh, though it needs just a little more vigor. The palate is brisk on the entry and quite sapid, with a very linear, malic finish. It could use a bit more weight and grip.
