2023 Chablis, William Fèvre

2023 Chablis, William Fèvre

The Fèvre Chablis comes from 40 parcels scattered across four hectares, from vines with an average age of 50 years. Much of these are grown around Chichée, near Vosgros, and give the quality you might expect in a Premier Cru. The result is a village Chablis of brilliant precision and nice freshness with a long voluminous finish.

Tasting notes

The domaine’s holdings cover 38 ha, and the various cuvées have just been blended, and will stay on lees through to December. Pale lemon yellow. An entrancing bouquet, on the sunnier side but with a mineral undercurrent. Sherbet on the palate along with citrus, good concentration, and an evenly balanced finish. Drink from 2025-2028. Tasted Jun 2024.

The 2023 Chablis Village comes from 50 plots over 38 hectares and cropped at 58hl/ha. Just 15% of this Village Chablis sees used barrels, only after malo. It offers apple blossom, chalk and freshly sliced pear, simple but effective. The palate is well balanced with a tang of acidity, fresh and crisp with a malic finish. Moderate length. A solid Chablis Village.
