2018 Chablis 1er Cru Montée de Tonnerre, William Fèvre

Over two hectares in three different terroirs here. Some for tension at the top of hill, some in Chapelot for richness and power, and a west-facing 1936 planting that’s very mineral. Very pure and elegant, most precise wine in the cellar. Crushed rocks and oyster shell, and a touch of gunflint. Palate is so savoury and almost unforgiving, lip-tingling salinity and amazing purity on the finish. One for the purists.

2018 Chablis 1er Cru Montée de Tonnerre, William Fèvre
Domaine William Fèvre

William Fèvre started his eponymous domaine in 1957, buying the region’s premiers and grands crus when they were out of fashion. He established the domaine as one of Chablis’ most prized, only retiring in 1998. He has since sold the estate to Champagne Henriot, who put the talented Didier Séguier at the helm, formerly of Bouchard Pere et Fils. Oak use has been reduced, and no new barrels are used. Here’s Chablis for lovers of Côte de Beaune whites, crisp and steely with round flavour.
