2015 Chablis Grand Cru Les Preuses, Domaine William Fèvre

The word ‘preuses‘ comes from the word perreuse, meaning stone, and refers to the Roman road which runs below the vineyard. Floral notes are balanced with an intense minerality. This is a wine that will age beautifully.

2015 Chablis Grand Cru Les Preuses, Domaine William Fèvre
Domaine William Fèvre

William Fèvre started his eponymous domaine in 1957, buying the region’s premiers and grands crus when they were out of fashion. He established the domaine as one of Chablis’ most prized, only retiring in 1998. He has since sold the estate to Champagne Henriot, who put the talented Didier Séguier at the helm, formerly of Bouchard Pere et Fils. Oak use has been reduced, and no new barrels are used. Here’s Chablis for lovers of Côte de Beaune whites, crisp and steely with round flavour.
