Caille is the old french word for stone, so as you’d expect this is an incredibly stony vineyard. This wine it’s given is very Chassagne in character: floral and mineral with a lemon oil texture, excellent acidity and length. Tight but well defined at the moment, with a little time in bottle it’s sure to open up. This wine is limited to one case per customer. If you wish to purchase more, please give us a call.

Thierry Pillot is one of the most exciting white winemakers in Burgundy today. He and his sister, Chrystelle (who’s married to Arnaud Mortet of Gevrey Chambertin), have elevated this previously overlooked domaine to one of the stars of Chassagne. With excellent holdings in both Chassagne and St Aubin, Thierry unashamedly makes wines to suit his own palate. He loves taut wines, with fresh flavours that show their origins. And he hates the flavours of oak.
