It’s often said that vines produce their best when under extreme pressure, and Chablis is so far north that its vines require oil-burning smudge pots to ward off late frosts. But the results, whether easy drinking wines dubbed simply Chablis, or more complex and age worthy Premiers and Grands Crus, are some of Chardonnay’s most impressive wines. What’s more, despite their quality, the prices remain remarkably reasonable compared to their southern Côte de Beaune Chardonnay cousins.
