A good dry Sherry packs the delicious toasted nut flavours and citrus tang that makes it a fantastic match for savoury pastries, nuts and even a delicious wedge of hard cheese. Chilled, it makes the perfect aperitivo too.
Named after the Poniente winds, these sherries are produced from the el Aljibe vineyard in Pago Añina, and aged in a restored house tucked among the vines. The Fino comes from a very small selection of barrels that are displaying the finest flor. Expect typical yeasty and brioche notes combined with wild herbs and lemon citrus. The palate has a zesty acidity and saltiness.
Due to light filtering, this Fino has real character and expression. Lemon citrus, herbal and olive brine support bread and salted almonds notes. There is a saltiness on the palate and despite Palomino being relatively low in acidity, this Fino displays a lively acid profile.
Yeasty, bready notes combine with sea spray, bruised apple and a hint of burnt orange on the finish. Spice and herbs add complexity alongside the palate’s finesse and vibrancy. Pale gold in colour, this bone dry sherry evokes memories of being by the sea with its salty and saline palate. Quite simply delicious.
