2021 was a cool and wet year in Western Australia but for white wines it is emerging as a great vintage with electric wines bristling with energy and bright acidity. The team at Cullen use a mixture of 35% new French oak, concrete eggs and amphoras to build complexity, and this, along with the wild ferment and full malolactic, gives a softer dimension to what could otherwise be quite a shrill vintage for Chardonnay here. There are plenty of biscuity, creamy notes, with lemon and grapefruit flavours. There's a seam of intense mineral-tinged acidity.
