As with Tom’s Burgundy-esque Chardonnay, this is serious winemaking – whole bunch pressed and fermented in 50-litre French oak puncheons – the extraction on the Pinot Noir is superb. Beautifully ripe wild berry fruits with hints of forest complexity and a cool minerality running through the medley of flavours. With perfectly balancing freshness, this is an awesome Pinot Noir.
