This is a blend of 50% Pecorino, 30% Passerina, 10% Trebbiano, 10% Malvasia di Candia, with time on the skins giving a beautiful golden colour to the wine. On the nose notes of orange blossom and seville orange peel, and there’s a smokiness, too. The palate has hints of wild herbs - thyme and oregano - and then there’s a stunning, saline, textured finish. This is a wine all about subtlety that builds and builds: as it stays in the glass complexity develops. It’s a stunning white, from a hidden corner of Italy.
