François Billecart’s policy is to release wines when he feels they are absolutely entering their peak. As a result he took what some people judged as the unusual decision of releasing his lovely 1997 ahead of the 1996. His reasoning was totally logical: 1997 was a vintage of elegance whilst the more racily structured 1996 needed further time to fully develop and show its true class. Eighteen months later the sense of his decision is clear to us all, this is full of yeasty, biscuity flavours, with a lovely purity of fruit, harmonious with a lingering finish. Billecart-Salmon at its best.
