Like his Prés Dieu cuvée, this wine is unfined and unfiltered and has spent a year and a half on its lees in bottle before disgorgement. The Pinot fruit (50/50 Noir & Meunier) gives it a richness and breadth, and make it another example of Guillaume's superb talent. He is a rising star in the grower Champagne circle, and definitely one to watch. With just 1.5 hectares of vines in the villages of Vrigny and Coulommes, he is able to lavish extreme attention to detail on his wines. He uses oak sensitively, and carries out vinification in 3-7 year old barrels, but resists long ageing in oak.
