Bollinger are a Champagne house who appreciate the benefit of ageing. Their R.D releases undergo ageing more than four times longer than the appellation requires. The wines take on a majestic power and energy, and often surpass the vintage releases from the same year in their complexity and depth. This is certainly the case in 2007, where this R.D has the fabulously opulent nose typical of Bollinger, with the vibrant, chiseled body of the vintage. The nose brims with sweet spice, ginger and nutmeg, and toasty, brioche notes wrapping around the creamy fruit. The palate is smooth and perfectly weighted. Utterly delicious.
