In the commune of Morogues, the gregarious Bertrand Minchin owns a considerable 17 hectares and produces first-rate, ageworthy Menetou-Salon from Sauvignon Blanc. Like much of the terroir of Sancerre, Menetou-Salon is planted primarily on Kimmeridgian marl, essentially an old seabed beset with fossilised sea life, whilst the sprinkling of clay makes richer, more concentrated and aromatic wines than are often found in Sancerre. The Honorine is Bertrand’s pride and joy.
