Clos du Papillon is one of Savennières’ finest sites, taking its name from the shape of the vineyard that resembles a butterfly. A south-west facing plot, Evelyne’s part of the vineyard has stony soils, and this is a serious wine, with a fantastic juicy, saline, mineral character. The palate is textured and weighty, with fantastic freshness. Impressive.
