The use of 70% Clairette in the blend brings acidity and minerality, which when coupled with the ripe pear and white flowers aromatics creates a beautifully balanced wine. When tasting in the autumn, we had to reserve the final few cases on the spot: this wine sells out as soon as it’s bottled.
