Just a little whole bunch is used here, and it works brilliantly. The Gamay shows all the structure and sophistication of the Boillots’ Côte d’Or Pinots, but with the juicy, pretty, peppery texture of Beaujolais. It’s got gorgeous blueberry fruit, and fine-grained tannins, thanks to the excellent granitic terroir.
The 2023 Moulin-à-Vent Les Rouchaux has a potent nose, with more black fruit than the Vieilles Vignes and a hint of licorice joining the fray. The palate is medium-bodied and fleshy in texture with rounded tannins, a fine bead of acidity and a harmonious black cherry and boysenberry finish. It has plenty of sucrosity—maybe too much for some?
