2016 Chassagne-Montrachet 1er Cru Les Caillerets, Domaine Paul Pillot
Caille is the old French word for stone, so as you’d expect this is an incredibly stony vineyard. It’s slightly withdrawn at this stage, but there’s impressive, powerful fruit underlying, along with nice acidity. Very reserved, but you can feel the energy.
