2015 Chassagne-Montrachet 1er Cru Les Caillerets, Domaine Paul Pillot
Caille is the old french word for stone, so as you’d expect this is an incredibly stony vineyard. This wine it’s given is very Chassagne in character: floral and mineral with a lemon oil texture, excellent acidity and length. Tight but well defined at the moment, with a little time in bottle it’s sure to open up.
