Catharina used to make a Savigny Les Vermots, but from 2022 going forward, she is blending Les Vermots with a tiny plot of premier cru, Les Peuillets, and now a teeny addition from Les Villages. The label didn’t change, but the name did, and its new one is a nod to the first book of Marcel Proust. This is ethereal and fine-boned, with a peppery length.
