This cuvée uses 40% whole bunches which, Claude explained, gives some freshness to the wine by providing natural aeration during a long, slow fermentation. There is a beautiful perfume to the nose and the fresh fruit intensity is underpinned with a very fine tannic construction which has suggests a sweet note.
