Now showing at its peak, the 2007 Haut-Bailly is a wine of elegance and refinement. There is a gentle, resolved and velvety texture to the tannins here with a cassis core. Savoury notes of warm cedar, leather, and a little truffle add complexity as the wine floats over the palate with graceful sophisitication. A wine that speaks with understatement and nuance, it is a very classical Pessac from this vintage.
