It’s often said that vines produce their best when under extreme pressure, and Chablis is so far north that its vines require oil-burning smudge pots to ward off late frosts. What’s more, despite their quality, the prices remain remarkably reasonable compared to their southern Côte de Beaune Chardonnay cousins.
