2007 Vin Santo, Isole e Olena, Toscana
There’s a good reason this wine is one of the first to go at our annual range tasting. Malvasia (65%) and Trebbiano Toscano (35%) grapes are dried for 3 - 5 months before the concentrated berries are pressed and aged for five years in small barrels before bottling. Its deep amber colour gives way to quite an open nose full of dried apricots and chestnut honey. Though luscious, its acidity lifts it - never cloying.
