2016 Saignée de Sorbée Extra-Brut Rosé, Vouette et Sorbée, Bertrand Gautherot

100% Pinot Noir. Bertrand Gautherot was one of the earliest Champagne growers to the biodynamic party, and has been certified by Demeter since 1998. He has been a trailblazer in the Aube ever since, setting an example that many younger growers have followed. His vineyards are closer to Chablis than Reims, and the Kimmeridgian limestone soil is an important part of the domaine's style. This comes from the Sorbée lieu dit, which lies on Portlandian limestone - a soil type that accounts for just 1% of the appellation. The vines were planted with old massal selection from Domaine Lafarge in Volnay. Whole bunch Pinot undergoes semi-carbonic maceration before the saignée (bleeding off) of the rosé juice takes place. Rare, and very exciting.
