2015 Les Ursules Blanc de Noirs, Roses de Jeanne, Cédric Bouchard

100% Pinot Noir. Cédric Bouchard is enjoying a meteoric rise in his reputation. These are fast becoming some of the hardest to find Champagnes. He had started his career as a sommelier in Paris, but in 2000 decided to return home to the family domaine in Celles-sur-Ource in the Côte des Bar, where he has brought his huge knowledge of world wine styles to bear on his own thoughtful production. His way of making wines often leans more towards Burgundy than Champagne. His philosophy is: single vineyard, single variety. And in each of his cuvées he seems to transcend both, creating something truly special. He has some of the lowest yields in all of Champagne, and practices ageing in tank, low pressure, and zero dosage. Les Ursules is Cédric 's most emblematic cuvée, made from the original 1 hectare parcel passed on to him by his father.

Tasting notes

The 2015 Blanc de Noirs Les Ursules is fascinating to taste next to the other Pinot Champagnes, all of which are brighter. Here, the weight and gravitas are very much front and center. Red cherry, kirsch, plum, mint and spice all blossom in the glass. The Ursules needs air to shine. A bit of time in the glass really brings out the creaminess and volume of the Pinot fruit. This is such an inviting and expressive Champagne. No dosage. Disgorged: April, 2019.
