P2 - or Plénitude 2 - is a fascinating wine to taste. It comes about when the team at Dom Pérignon hold back a small portion of vintage Champagne in their cellars of Hautvillers. For a further 10 years after the wine’s initial release, these bottles age on lees and gain in richness and complexity. So in total, it means the wine has spent almost two decades before disgorgement. What has this extra time added in the case of the 2003 P2? Harmony, complexity, and intensity. The wine has the power and flamboyance of the 2003 vintage, with the structure and genuine freshness afforded by recent disgorgement. It has wonderful roasted nuts and brioche notes on the nose, with a textural and deep, concentrated weight on the palate. But perhaps the most impressive aspect of this wine is its length, which is beautifully savoury and fresh. 5g/l dosage.
