This Coteaux du Layon is a sweet Chenin Blanc, with complexity borne of the many years' ageing in bottle. The Touchais family have been making wine for eight generations, since 1787. The cellars, found beneath a side street in sleepy Doué-La-Fontaine, have many stories to tell. This subterranean labyrinth was bricked over during the occupation of France during World War Two, to protect the many thousands of bottles hidden within. Once France and the cellars were liberated, it became clear that this extra ageing had elevated the wines. And so today, Moulin Touchais is famous for the late releases of its wines, many of which spend decades at the property before release.
