Le Pavillon is produced from 60 year old vines and made in tiny quantities, with incredibly low yields. It is the most serious and complex of Chapoutier’s single-vineyard Ermitage wines and a wine that demands considerable cellaring to unlock its considerable potential. The nose is relatively closed, but gives hints of blackberry, violets and pepper. The palate is dark, hugely concentrated and brooding with potential. The fruit is certainly there, but is currently hiding behind the wine’s considerable structure; it is hugely tannic, but the tannins are so fine that it is not difficult to taste – it’s like liquid silk! The length, and complexity of this wine are astonishing, but it will take a good decade to begin to unlock this wine’s considerable potential.
