Fine and light on the nose, with notes of white flowers and citrus. On the palate, there are crunchy apple and pear characters, zesty acidity and a steely minerality, which adds both structure and elegance. With a long finish and a surprisingly mouthfilling texture, this would match well with shellfish or white meat dishes.

Billaud-Simon never fails to deliver a scintillatingly piquant ‘village’ Chablis. Crisp citrus fruit is to the fore on the nose and on the palate, where it combines with softer peach flavours and a smoky minerality. Very pure and elegant.

2002 Chablis 1er Cru Mont de Milieu, Domaine Pinson

Domaine Pinson was a new find for us in the 2000 vintage and one that we have been extremely pleased with. They have been growing vines and producing wine for over 350 years in Chablis and today farm some 12 hectares including 2.5 hectares of grand cru. Laurent and Christophe Pinson who run the domaine have described the 2002 vintage as one of the best in the last 50 years, equalling or bettering the marvellous 2000s produced here. Although the wines are fermented in stainless steel, all premier cru and grand cru then spend a period of time in oak barriques before bottling. The 2002 Mont de Milieu is lime green in colour and possesses a strikingly mineral character. The oak maturation gives an added breadth to the nose and complements the ripe apple and peach fruit. This wine beautifully represents the style of the appellation with its ripe fruit flavours, nutty edge, weighted power and firm steely finish. It is superbly structured, full and long.

We love the darting acidity in this premier cru, and the citrus notes that partner the flinty mineral palate. Harmonious with a positive, precise texture.

Although produced from younger vines than the La Forêt, the Vaugiraut displays rich, full, broad, seductive fruit with benchmark race. Complete, with evocative fruit and hints of pain grillé and cream. A Chablis that combines structure, vibrance and richness.

"A very fresh version of Fourchaume, offering aromas of green tropical fruits and orange zest, plus a whiff of oyster shell reduction. Then big, ripe and quite dry, displaying an impressive combination of volume, definition and freshness. The orange zest note carries through in the mouth. "Light green-tinged yellow. Pure, nuanced nose hints at stone fruits, ginger, cumin and silex. Dense, spicy and sweet; concentrated, broad and mouthfilling but with a lovely light touch for the year.
