"From carefully selected casks of the 2nd criadera of Fino Amontillado. Many casks have lost their Flor cover so individual casks have to be very carefully chosen and those still maturing under flor are closely followed. It is about 8 years old and quite rare."
More complex on the nose, with smoky notes and hints of curry-leaf interweaving with preserved lemon. The palate is reined-in and tightly wound. Citrus provides a broad background to more subtle smoked almond, wet stone and spice characters. An intense, mouth-watering sea-salt freshness lingers in the mouth, giving this a clean and more-ish finish.
