Vilmart's Grand Cellier should be thought of as a multi–vintage blend rather than non–vintage, much like the flagship cuvée of one of Champagne's most hallowed names. The current bottling is a blend of 70% Chardonnay and 30% Pinot Noir from 2008, 2009 and 2010, and the ten months it has spent in large oak casks has given the wine a beautifully creamy texture and notes of spiced brioche. Vilmart generally don't let their wines go through malolactic fermentation, which means it has great, fresh acidity cutting through the rich flavours and giving this wine superb structure and precision. This brings out the aromas of white flower, minerals and grapefruit and really add to the complexity, balance and length of the wine and this should also allow this wine to age gracefully. It garnered 95 points in the Wine Spectator Insider Champagne Review in September 2013.
