Domaine Clos du Mont Olivet
Clos du Mont Olivet has been in the hands of the Sabon family for four generations, with winemaking responsibility now in the capable hands of Thierry Sabon. Winemaking techniques are highly traditional, with no de-stemming, no new oak and no fining and filtering - a decision which the family believes allows the fruit and the terroir to speak for themselves. The vines are ancient, and are grown on clay and limestone, producing a distinctly refined style that shows a real touch of class.
